WHITE PARMIGIANA WITH ZUCCHINI AND SHIITAKE

A delicious variation of the classic parmigiana: the white parmigiana with zucchini and Shiitake! For a light but complete meal with a more delicate taste! Without frying and in a healthy version, an easy and perfect recipe to serve both hot and cold!

Ingredients

  • 1 bag of sliced dried Shiitake mushrooms
  • 3 medium-large organic zucchini
  • 150g of turkey breast
  • 250ml of oat drink with no added sugar
  • 20g of wholemeal flour
  • 1 clove of garlic
  • Evo oil to taste
  • Salt to taste
  • Nutmeg to taste
  • Pepper as needed
  • Breadcrumbs to taste

Let's prepare it together!

First, soak the dried Shiitake mushrooms in boiling water and keep them aside while you prepare the rest.

Take the zucchini, wash them and cut them into thin slices. Then sear them on both sides in a very hot non-stick pan and once ready, keep them aside.

Meanwhile, let's prepare the bechamel: in a saucepan with high sides, add 2 tablespoons of extra virgin olive oil, add the wholemeal flour and mix well with a whisk. Then turn on the heat and when the mixture tends to compact and detach from the sides of the pot, add the oat milk. Stir constantly to prevent lumps from forming. Season with salt, add a pinch of nutmeg and pepper and continue stirring while cooking the béchamel over low heat.

At this point we prepare the mushrooms: in a non-stick pan put a clove of garlic, add the drained mushrooms (Do not throw away the water!) And a drizzle of extra virgin olive oil and sauté them in a pan adding the soaking water if necessary.

And now let's compose the parmigiana! Take a casserole and arrange a first layer of zucchini, add Shiitake mushrooms, turkey breast and a couple of tablespoons of bechamel. Then start again with another layer of zucchini and so on until all the ingredients are used up. Finish with a generous layer of béchamel and add to taste some wholemeal breadcrumbs, perfect for gratinating!

Bake at 180 ° for 10 minutes, placing the pan on a high shelf of the oven and… The white parmigiana with zucchini and Shiitake is ready!!
